Although “The Mindful Tomato” is a recent project it’s already very popular; it deals with cookery, nutrition and information for vegans and those with problems created by gluten intolerance.

I devised and implemented this project with a nutritional biologist to pay homage to traditional Italian cuisine, always a passion of mine. I create each recipe using seasonal produce, partly from my own organic vegetable patch. I make the dish and photograph it without using trick photography, chemical additives or inedible items (common in food photography). It’s exacting work but very gratifying and ethical.

For the moment the project is only in Italian, but luckily photography is a universal language with no barriers.
